Banana Chocolate Chip Mini Muffins
Makes 36 Mini Muffins
Ingredients:
- 3 ripe bananas 
- 1/2 cup coconut flour 
- 1 scoop BeWellByKelly vanilla protein powder 
- 1 tbsp ground flax seed 
- 3 eggs 
- 1/4 olive oil 
- 1 tsp baking soda 
- 1/2 tsp salt 
- 1 tsp cinnamon 
- 1 tsp vanilla extract 
- mini semisweet chocolate chips (optional, you could also add chopped walnuts in place) 
Preheat the oven to 350. Mash the bananas in a large bowl. Add the rest of the ingredients except for the chocolate chips. Mix well and pour the batter into a lined mini muffin tray. Top each muffin with a few chocolate chips. Bake for 12 minutes. When a toothpick comes out clean, it’s time to enjoy!
